Ingredients
- two 15 oz jars of small white beans, drained and rinsed
- 9 oz Arroyabe Bonito tuna in olive oil
- 1 jar Matiz Navarro artichokes, quartered
- 1 cup chopped sweet bell pepper
- 1/2 cup chopped roasted tomatoes
- 1/2 cup chopped fresh parsley
- 3 tablespoons La Masia sherry vinegar
- 3 tablespoons extra virgin olive oil
- 1 clove garlic, pressed
- salt and pepper to taste
In a large bowl, combine all salad ingredients and fold gently. Combine dressing ingredients and whisk thoroughly. Pour over salad and serve at room temperature.
