Spanish White Bean & Tuna Salad

Ingredients

• two 15 oz jars of small white beans, drained and rinsed
• 9 oz Arroyabe Bonito tuna in olive oil
• 1 jar Matiz Navarro artichokes, quartered
• 1 cup chopped sweet bell pepper
• 1/2 cup chopped roasted tomatoes
• 1/2 cup chopped fresh parsley

Dressing

• 3 tablespoons La Masia sherry vinegar
• 3 tablespoons extra virgin olive oil
• 1 clove garlic, pressed
• salt and pepper to taste

Preparation Instructions
In a large bowl, combine all salad ingredients and fold gently. Combine dressing ingredients and whisk thoroughly. Pour over salad and serve at room temperature.
